Ingredients
Makes 6 servings
1 (16 oz) package whole-wheat penne pasta
4 cups water
1 (15 oz) can no-salt-added black beans, drained and rinsed
2 bell peppers, diced (any color)
1 cup frozen corn
1 (10 oz) can enchilada sauce
3 Tbsp **HomemadeTaco Seasoning
1/2 cup shredded cheddar cheese
1/2 cup minced fresh cilantro
1 pint grape tomatoes, halved
Directions
In a large stock pot, add pasta, water, beans, peppers, corn, enchilada sauce, and taco seasoning. Bring to a boil. Reduce heat and simmer uncovered 12-15 minutes, or until pasta is tender and sauce has thickened, stirring occasionally.
Stir in cheese. Cook 2-3 minutes, or until melted.
Serve topped with cilantro and tomatoes.
Tips
Top with sliced avocado!
**Homemade Taco Seasoning
Ingredients
Makes 20 servings
1 Tbsp chili powder
1/2 tsp chipotle pepper powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried cilantro
1 tsp black pepper
Directions
In a small bowl, add all spices. Mix thoroughly until completely combined.
Use immediately, or store in an airtight container until ready to use.
